Jenn,
When you connect your iPhone to iTunes, you can go to devices, and then to
your iPhone.
It is here where you can decide what content goes onto your phone. 
I have mine only syncing playlists, then I choose which playlist or
playlists go to my iPhone, which to my iPod, etc. This way you can change
your playlist on iTunes, and it will be updated the next time you sync your
iPhone to iTunes.
I am getting a playlist together for Christmas music. When I want it to go
to my iPhone I will check the box to add it to my iPhone. When the season is
over, all I need to do is uncheck that box, and when I sync my iPhone again,
that Christmas playlist will not be on my phone any longer.
