If you do an encrypted backup to iTunes (probably even a regular backup) any voice mails you have should be included in the backup and restore to your new iPhone. Of course you might want to isolate this voice mail and archive it anyways and DJ's suggestion is probably as good as any, use a 3.5mm male to male cable, plug it in the headphone jack of your phone and use a recording device, maybe even a tape recorder. I guess you could just play it over the speaker and record on a tape recorder or the computer using a microphone with something like GoldWave or possibly even the built-in Sound Recorder in Windows.
