Regarding the other services, I worked with sidecar over the summer to improve compatibility with VoiceOver and Mika Pyyhkala worked with Lyft on the accessibility of its app. All the apps could use helpful hints to clue newer users to the purposes of the various elements. However, if the VoiceOver user familiarizes them self with the app before the need to take a ride at a given time, it can work really smoothly. On all the apps, people need to tap the pick up and drop off location to enter the data. The pick up location is entered automatically based on where the iPhone believes you are. In dense urban neighborhoods, 20 feet places someone at a different address so it the GPS is slightly off the pick up location may need to be entered manually. This can be dictated into an edit field with no problem though.
the apps from the three services are all highly usable with VoiceOver. None of them implements all the ideas found in Apple's iOS usability guidelines, but all follow enough of them so a blind person can easily use all the functions in the apps independently with VoiceOver.
