Shear size! they probably take up the same proportion of the glass on all devices, indeed some of the new ones have working screen so much closer to the outside edges than before. But proportion is the key word, big device means big screen and does require bigger gestures. I guess the firmware or ios calculates the significance of gestures by proportion of movement so that it works sensibly on all of them regardless of size.
iPad range puts more on the bigger screen since there's room forit, so get used to the idea of having more to look for or find on them. Web, windows and most other platforms have the concept of main area of screen and sidebar like a menu, often a top bar with options, and so on; so you get all this, insteadof burrowing down layer by layer in the small devices. So it's more sophisticated, or complicated to get used to, and so much more convenient when you do.
