I'm sure there are multiple ways to do this, but double tap and hold on
the folder name, or any app or folder name on your home page. Do this
before opening the folder who's name you want to change. Now double tap
on the folder who's name you want to change, and you'll see that the
name of the folder is now an edit field. Double tap on the name, and
your keyboard will appear.
