Hello Simon, I restore is whenever you hook your phone up to iTunes and hit the restore button. This will set your phone to factory defaults meaning send you back to the main iOS screen whenever you first get your iPhone out-of-the-box. A hard reset, a hard reset pretty much reset all settings except voiceover. This will shut the phone off and then turn it back on and then you have to configure all your settings again.
