I'll add a couple of other things to Arnold's excellent comments below. The iTunes Backup section is sort of divided into two areas, automatically backup on the left and manually backup on the right. Unfortunately, the way the information is spoken as you tab through these sections is less than clear. You might actually tab to a line that is spoken about the manual backup section before you complete the automatic backup section. This is not unlike when you are tabbing between multi-line column headings that aren't set to read in their entirety before advancing to the next column heading. In other words, the screen reader might read line 1 of the first column heading and then line 1 of the second column heading, followed by line 2 of the first column heading, etc. It makes things more than a little confusing.
In the Automatically Back Up section there are two radio buttons of which only one can be marked, iCloud or This computer. So you can have your automatic backup set to go to iCloud as I do or to your local computer. In the Manually Back Up section, there are two option buttons, Back Up Now and Restore Backup. When you choose Back Up now, the manual backup is made to your computer. Finally, in the Automatically Back Up section, there is a tick box just below the This Computer radio button where you can tick to Encrypt iPhone Backup. Assuming you are using iTunes with the side bar in effect, arrow down through the various options to find your iphone, it will say your iphone, followed by closed or open.If it says closed, right arrow to open it. After opening it, the differences in what you see as you tab through the many options are subtle, but one important one is in the backup section. Here again, assuming you already have backed it up, using the encrypted backup, in the past, when you get to where it says backup to this computer, you do not have to check that box. Also, you do not have to enter your password. Right after that is backup now. When you hit enter, it will use the same criteria that you used the last time. It also will let you know if there are any new apps on your device that are not backed up, and ask if you want to back them up. If you back it up in this manner, it goes much faster, being that it is only backing up what it needs to back up, comparing your device now to when it was previously backed up, rather than having to back up the whole device again. I check the box to backup to iCloud and let it do that. Once that is done, I do another backup and check the box that says, back up to this computer and select to do an encrypted backup. It asks me for my password or to create one if it's the first time and let it do that backup. It doesn't take long to do either and I feel more comfortable to do it that way. You will notice anyway that Checking backup to this computer will uncheck the backup to iCloud so I have to assume you have to do it in two steps.
