My phone behaves differently. I double tap the "from" field, and I am placed in the "bcc" field. I have to double tap 'from" again to get the picker to show. Once it is on the screen, I make my selection and simply double tap once I have swiped to the desired email address. That selects it, no done button required. I don't know why others don't have to choose it twice, but if you are having trouble getting the picker to appear, that might be your problem.
