Transferring purchases transfers anything bought on the iPhone and puts it onto the computer. Syncing involves any kind of music or ring tones or anything like that that you synced from your computer to your phone. Backing up is backing up all the app data and settings on your phone. And encrypted backup will back up passwords for Wi-Fi and I believe stored Safari passwords.
