I would suggest you try and delete Skype off your phone and then redownload it because I can't reproduce this at all neither with the last version or the one which just came out. After I place a call I have "End Call" a bit up from the Home key, I just put my finger on the home button and move it straight up. Once I find End Call I can flick left for the in-call DialPad, for Mute and for Speakerphone On/Off.
