I did an encrypted backup a while back. Will all subsequent backups have also
been encrypted? I was never again asked for a password. Is there any way I can
check it's still doing encrypted backups?

Hi mark, Sieghard is correct. An encrypted backup is the only way to keep the
keychain. Not encrypting your backup will lose certain data, such as passwords.
If the app is backing up those settings separately to the iCloud keychain, then
they'll be preserved that way, but there's no guarantee all apps one has will
be doing this.

I have restored my various iPhones, from a refreshed state, from my backups

Now it is possible, in the latest version of iTunes that it may now be

You can back up to iCloud which you would do in Settings, iCloud, Backup.
You can turn Backup on and this automatically backs up your phone's settings
once a day as long as your phone is connected to power and I believe it has
to be on WiFi for the automatic backup. You can also initiate a backup by
tapping on the "Backup Now" button.
I do have iCloud backup turned on, but I also back up my iPhone using
iTunes. So, yes, you do need iTunes if you want o manually backup to your
computer rather than to the cloud via the internet. If you do backup with
iTunes I suggest you turn on encrypted backup since it does a more complete
backup which includes all your passwords and so on. To do an encrypted
backup for the first time in iTunes, do this:
1. Connect your phone to your computer and open iTunes (I am assuming
you have iTunes installed on your computer).
2. Go to your device in iTunes and then tab a lot until you find the
checkbox to turn on encrypted backup. Check it with the spacebar.
3. You will be asked to enter a password to protect your backup, enter
it and then tab to enter it again for verification then tab to OK and
activate it with the spacebar or enter key.
4. Your backup will automatically start.
5. To back up your phone again later, just go to "File", "Devices" and
select backup from the options.
Keep in mind that a backup will not back up any music or other media you
synced to your phone via iTunes. It will backup the settings and that
includes what was synced, but if for example you deleted all your music that
you had previously synced and did a restore from a backup, that music would
not be restored if it is no longer in your iTunes library.
