If you are on a GSM network, both people should back up their phones and reset them. Then they will swap sim cards and restore the switched phones. So if you are switching with Bob, you and Bob will back up and then reset your phones. You both will remove the sim cards from your phones and exchange phones with each other. You will insert your sim card from your old phone into the phone you just got from Bob and then restore it from your earlier backup. Bob will do the same with his sim card and restore his phone as well.
