How well does IOS 8 work on the iPhone 4S 32 gig? Does it provide more
stability, or work better on newer models?

You can, there is also a very thorough bug summary on Applevis.
The one bug I would add that is not presently in that article, is that
sometimes answering a call with a two-finger double-tap after you've been
listening to audio will cause audio to resume rather than answer the call.
This can get pretty messy.
