Is it possible you have Gmail set up to use POP instead of IMAP? What
you describe could happen if you're using POP and you don't have it
configured to remove the messages from the server after downloading them
or deleting them.
Also, are you just talking about the in box? When using IMAP, if you
delete a message from the in box Gmail moves it to your trash folder, so
you'll still see it in your trash and all mail folders.
Also, last I knew, the email client on the iPhone defaulted to moving
your email to the archive folder. You can change this in your email
settings to have your messages sent to the trash folder instead of the
archive folder. You'll see archive instead of delete at the bottom of
your messages and in the roter when you flick down if you haven't
changed this default yet.
