Gmail will delete messages in the Trash folder after about 30 days. I just let Google do this clean up for me.

Also, are you just talking about the in box? When using IMAP, if you
delete a message from the in box Gmail moves it to your trash folder,
so you'll still see it in your trash and all mail folders.

Also, last I knew, the email client on the iPhone defaulted to moving
your email to the archive folder. You can change this in your email
settings to have your messages sent to the trash folder instead of
the archive folder. You'll see archive instead of delete at the
bottom of your messages and in the roter when you flick down if you
haven't changed this default yet.
