Do folks who know how Apple works think there will be an 8.0.3 release between
now and the release of 8.1?

It's possible they update the iPod Touch again, but my guess is that just as
with the last update (the Fifth Gen) it will be behind in terms of processorand
size. I doubt Apple would make a relatively inexpensive device (compared to the
iPhone 6) which basically costs half as much but has all the same specs except
for being a phone. There are already the iPads who fill that place and the iPod
Touch has been a very small part of Apple's business for quite a few years now.
But let's just wait and see, we shall know in 19 days.

Sieghard

I'm hoping Apple will come out with an iPod touch 6th generation with the
same specs as the iPhone 6.
