Ok, when I put all the right things on, I found that the send button sat next to an inactive text field, and tapping said Send button converted it to a record button, which I then used. So all very interesting, finally.

The place where the send button is will now say record audio. If you bring up the keyboard, or if it comes up on its own, the button will now function as the send button for you to send a regular text message.
