Is it possible that after you double tap and hold on the Record button that you are moving your finger?

Problem is really that the recording won't really happen, the tone starts, while holding, and then the phone jumps into the edit field for you to type, and then you can indeed see the send button and so on. Take a look at the settings under iMessage is you can configure some of the settings for all your messages there.
