Francesco, to run Asterisk without root privileges you need to apply a patch made by Matteo Brancaleoni which will retain the CAP_NET_BIND_SERVICE capability while Asterisk drops his privileges. It is still untested, but I'm testing it right now. I've just added the patch to the Arch repository.
