I'm sure you can configure this from the user settings etc,
Not sure if its from the viewer end or the server end,
But I doubt you can switch between those two modes at will like you
describe.

    I am using vnc at my work.  I was wondering if it is possible to
have
vnc take full control of the keyboard and mouse when not in "view-only"
mode
but to have vnc yield control to the local machine when in "view-only"
mode.
    This would allow me to simply watch a colleage as he demonstrates
tasks,
but also at other times to have full control of his computer so that a
passerby can not access his computer or fight for control of the mouse
and
keyboard.
