Scott,
To determine the number of colours for VNC to use under Windows, simply
set the client and server computer's pixel formats under the Display
Properties dialog for the two systems - it's not a VNC-specific setting.
If your network connection is slow then you may find that VNC
automatically reduces to 8-bit colour. You can override this via the
VNCViewer Connection Options dialog, by de-selecting Automatic Encoding
Selection and de-selecting 8-bit Colour.
