Multi-Monitor setups are nice, and in the same situation I would want both computers myself. I haven't used any of the virtual display drivers and suchlike myself, and I cannot comment on how well they run, or any of the details thereof.
Instead of using VNC couldn't you just use KVM switches? Even if you just had 3 single ones (I don't know if they make a 3 head switch, I am sure somewhere you could find a 2 head). You don't have to worry about getting VNC setup with any special drivers, or have to worry about switching the cables over if something happens and VNC crashes. Also since you would be plugged directly into the monitors, there wouldn't be any leg from network traffic. I have coded over VNC before, and the network makes your keystrokes feel spongy IMO, I personally would much rather have the monitor plugged directly in.
