Robert, I'm a little confused. VNC provides remote access to desktops and you seem to be complaining about it doing just that. Making the whole desktop available remotely is precisely what it should do! If the problem is really the sheer scale of the total desktop, can't you simply move the monitors to be side-by-side?
Further detail on the Desktop options not working would be useful. In particular, are effects such as shaded window titlebars and anti-aliased fonts being disabled or not?
