first, if you will be connecting exclusively through a VPN, you are already within a secure channel.
second, I would say your test was successful. unless you have something like windows server with terminal services set up and the vnc server running inside the TS session, connecting to the local host will pretty much only show you the window upon window things, because that is what is there to show as it draws itself in a repeating cascade.
