Joe, Please refer to my earlier reply regarding reasons why VNC might exhibit problems while other network applications might not.
As I previous suggested, the problem sounds to be with your router or modem. Have you checked the Application Event Log on the server computer, for messages indicating why the server closed the connection? If your computer's physical network connection is physically damaged such that it appears to by physicall disconnected every so often, then you may well see Windows' TCP stack closing connections. If this were the case then you'd frequently see the "Local Connection Connected" message pop-up from the task bar. It sounds to me, though, like either the router or the cable modem is partially crashing, and is then re-setting itself. For web browsing and other network applications that don't require network connections to be held open for prolonged periods, this will have little effect, if any. For long-term connections such as VNC, this will cause them to disconnect at seemingly random intervals.
