To be completely accurate, you can hide the VNC icon if you deploy the UltraVNC version of VNC. There is an option to do this very easily when deploying via the wizard inside VNC Scan. I'm not sure about the other deployment tools.
I totally agree with the we need to protect VNC's image as a remote administration tool and not as a piece of spyware but in the end, you are the master of your own network and it's up to you to decide how to monitor your own property.
