Now you're pulling my liver ;-) The risks you mention are real, let's just hope they stand by their "Don't be evil" corporate motto! In any case I don't use gmail for confidential emails.
Regarding customized search, I see they do indeed have this feature, but it doesn't apply to their standard search box: all users typing the same query in the Google.com box at a short time interval do get the same results in the same order. I am quite sure of this as many people I know rely on this feature to point to a web page on the phone: "Google for bla bla, third hit in the list".
