There are resivoirs in pristine watersheds in the Catskill mountains. I have
driven by one, the Neversink, on the way to Frost Valley, a YMCA camp in the
area. That area is so pristine that the government uses it for sampling
global water quality. The water from these resivoirs needs no treatment. I
understand there is a third source for NYC which does require some
treatment. At one time there is/was a company bottling NYC water and selling
it. It is as good as those with exotic names, whilch are often filtered
local tap water.

No, I meant the New York City only. All of the water in the city comes
from the two locations shown on the map at nyc.gov.
Most other cities in New York State are smaller and can get enough water
from local sources. As far as I know, water is not imported from Canada
anywhere in the state.
