I have found that some of the Home Depot have a decent section of connectors/mounting plates for a wider variety of A/V hardware then I had previously believed.
The one in Elk Grove has most of an aisle with everything from Ethernet hookups, sterio wallplates and phone testing equipment. If you are going to put a box in, you want to go for a 'remodel' type box. You would generally cut a hole 'just' big enough to slide the box in. It then has 'ears' that swing out to anchor it to the drywall.
