There may be a small problem...I assume you selected Open, then pulled
down EntryType to cascade, and then clicked Update, which changes the
type of Open to <cascade>.  Like you, when I do this, and then 
double-click on Open, nothing happens.  But the (current) work-around
for me is this:

Pull down Entry type to cascade;
Click Add -- this adds a new Open (or Close or whatever) of type <cascade>
  at the end;
If you double click on this, it changes to the appropriate list box for
setting up the cascade you need;

Of course, one may need to delete the original Open, etc.
