1. Is there any way of recording an ichat video conference?
Audio could be recorded with Rogue Amoeba's Audio Hijack or something similar. You might be able to grab frames using Snapz Pro X, but the performance wouldn't be great.

2. Dave Caqrson has a new phone bluetooth enabled NEC E616V Telephone & computer recognise each other but can't exchange data - does anyone have any experience with this type of phone? (he's using a Titanium 550Mz 10.3.5 using a USB bluetooth dongle)
BlueTooth phones often support different capabilities. You can check what capabilities the phone has available from the BlueTooth Setup Assistant (I think, it may have been the BlueTooth System Preferences pane).
