I had the extremely knowledgeable Rob Findlay of MacTherapy over here
yesterday to show me how to do exactly what you're asking.
He downloaded a shareware app called 'Carbon Copy Cloner' which did
just what it said.
Copied the entire contents across and then booted from the new drive -
presto!
