Hi all,
Isn't the 580 an older generation mac, pre PPC. If so that could put severe
limitations on the system and software you can run

You're right of course. What was I thinking? Low end mac says
        • LC 580 introduced 1995.04.03 at $1,300; discontinued 1996.03.02
        • Performa 58x introduced 1995.04.13 at $1,300; discontinued
• requires System 7.1 (with Enabler 065) or later; highest version supported without a PPC upgrade is Mac OS 8.1. So I might just say it's not really feasible, although I could follow Onno's suggestion and install OS8 on an empty drive but I think I'd run out of disk space for any apps. It only has 500mb to start with and the OS8 update needed an additional 120mb over existing 7.6.1. There is only 108mb currently spare. I think the good teacher will need to stick with existing OS7 compatible software and wait until her classroom full of 100 Schools Project Windows machines arrive later in year!
