I dont think it has the option I was asking
in the PC world many programs I used can set a certain email address
as plain text So you can set individual email address in the
addressbook as Text or rich text, Saves you doing it manually each time

1. Mail > Preferences > Composing > Message Format causes all
future messages to be Plain Text
or
2. New Message: Format > Make Plain Text causes only the current
message to be Plain Text
