The Mac OS X Print Dialog generally has an application-specific component to 
it, which contains features offered by that particular application as opposed 
to more generic printer features. For example, Safari has the options to print 
page backgrounds, but you won't find those options in TextEdit or iTunes, which 
offer different options of their own. 

The ability to print double sided, however, depend on the capabilities of your 
printer. The particular application doesn't care. My Canon MP970, for example, 
has an option called "Duplex Printing and Margin". This option is available no 
matter what application I'm printing from. It's certainly there in both Pages 
and Word. 

The location of the duplex printing settings, however, does vary from printer 
to printer, and can be anywhere from a specific setting such as in the Canon, 
to an optional setting in the Layout section. Are you certain that you are 
printing both Pages and Word documents to the same printer?
