Hi Chris, There is always the old fallback of the Voice Memos app that comes with iOS. It's not very fancy but it may do the job for you. Memos you record in it will copy over to iTunes on your Mac when you sync.
Failing that there are a number of third party voice memo apps that I have not investigated.
