Hi Daniel,
I have checked the settings for the iPad:
'automatically sync' not selected 

but sync tv shows and sync movies is - in each tab

Should I change the setting in Summary to :

manually manage music and videos?

Currently set to 'sync only checked songs and videos'.

Check when it's synched to iTunes, under the Device itself then the Movies tab.
Make sure where sit says "Automatically include" you don't have it set to any 
of the "unwatched" settings. 
If you do, then once it's watched, it won't sync anymore.
