Hi Alex

Print Preview has been "adjusted" to be a lot easier (Personally I think so.)
When you go to Print you should see a "preview" of the page you are about to 
print. Underneath this "preview" will be the list of number of page (e.g. 1 of 
3 etc). Just to the right of this will be a single arrow (triangle) then a sort 
of "double arrow/triangle with a line). The single "arrow" will take you to the 
next page preview and the "double arrow" will take you to the last page preview.
This way you can look at Page 1, Page 2 and Page 3 (and so on,….). That way as 
you're stepping through the pages you can decide which ones you want to print.

(Also, I find it helps if you're looking at the "larger" print dialogue as 
well. This will be shown from the button "Show Details" or "Hide Details. One 
will give you the "quick and nasty" print dialogue, the other will give you 
more settings to customise.).

Not sure I 100% follow your "slippery trackpad",..but I'd suggest to have a 
look and play with System Preferences - Trackpad. As the Trackpad is a lot more 
"Gesture based" now, you may want to look through all the settings and turn 
some off until you get used to it, incase you're "bumping" one of the other 
settings with different touches etc….
