This would have been my question too. I have a Canon MX 926 multifunction printer which I’m delighted with, and while it comes with excellent scanning software, I hardly ever use it. Invariably I simply open Preview and use File > Import from Scanner. This opens Image Capture, and the scanning results are opened directly in Preview. The features available in Image Capture are comprehensive, and I have all the control I need over the quality and destination of the scanned image. The Canon software, as good as it is, is much more fiddly.
