Short answer.  Success - name is now “AppleTV”.

The Apple TV is connected to the Time Capsule via ethernet, not WiFi.   

I did not previously try to change the ATV name within the device itself.  
There was no “Apple TV (2)” listed.   It gives a list of names such as Apple 
TV, Bedroom, Kitchen, Living Room, Custom... etc.  (Device name changes can be 
made from either the General or AirPlay menu items in ATV2.)

I modified the name under Custom, but had to add a real character, not just a 
space.  This change became immediately visible in the AirPlay selections on 
iMac and iPad.  I reverted to the default Apple TV description - and this also 
became immediately visible as the AirPlay identifier.   Did not need to save 
the name changes or restart the ATV.

I guess I was expecting a high-tech fault with client ip address and Bonjour 
problems, so I didn’t link changing the device name with the issue in your 
first message.
