Paul answered this one first, but I found something of interest at http://www.wisegeek.com/what-is-a-picnic-ham.htm where it said a picnic ham was a major component of a Boiled Dinner. Looks Foley's Market is the source for at least one of ingredients when the Fire Department has a Boiled Dinner and cribbage.
