I'm guessing that unless a certain episode focused on what time it was and why that was important to the plot, it was easier to film without having to readjust a clock. In viewing reruns of I Love Lucy, I have noticed that the clock in the living room (by the kitchen door) is always at 2:05 (or something close). I guess at that time, even though Desi was the first to use the three-camera setup with real film instead of the poor quality kinoscope, they didn't realize that the show would be seen over and over in reruns, and that those little things would even be noticeable.
