Hi Ross - I'm not that familiar with Exchange (I run an Ipswitch Imail server), however I will make one suggestion. DO NOT set up a "catch all" account (commonly referred to a "nobody" alias/account). If you were to ask 100 mail server admins, they would all probably take out a wet noodle and start walking towards you (trust me - been there, done that!). This is a main target of dictionary attacks as spammers try to find valid accounts. We used to do it, but there is absolutely no good reason any more to do that.
As for the other questions, unless someone here is experienced with Exchange, you may need to join an Exchange list to really benefit. Or take a look at M$'s KB (http://www.microsoft.com/exchange/support/default.mspx). I have dabbled with Exchange but would have a very difficult time giving you step-by-step instructions.
