You'd have to make a virtue of being closed. Something like:

"We are often fully booked for the evening for private parties. Please
call ahead to check seating availability. We'd hate to have you make
the trip only to find out we're hosting a private party."

I agree on all counts above. I hate getting to a place to find it's closed. Personally, I would sooner they hire the staff to be open like a restaurant should be *and* do their catering on the side but of course that's not my or your decision to make. If they hire you to do the maintenance then you can make some extra $$$, though.
