I'd recommend one of: Linux, FreeBSD, or BSDI.  BSDI's Unix offering
for the Intel platform is the best available: it's rock-solid, production
ready, open-source, and makes the machine scream.  But it's pricey,
and if you're just trying to get your feet wet, it's probably overkill.

So chances are that for your purpose either Linux or FreeBSD will do
the trick.

Solaris on Intel?  I've dealt with it many times, but I don't really
recommend it.  Not that it's bad, it's just that their effort are mostly
focused on Sparc platforms and so I don't think sufficient work has gone into
tuning it and making it easy to install.
