i'm of irish descent as well but i'm also half hispanic...  odd 
combo i know...

my best friend in denver got married in her garden, barefoot, and in 
a dress she made herself (i call her a granola girl cuz she grows 
her own veggies, has a compost pile, and no microwave or cell phone -
 but she insists she's just a purist) - we picked her bouquet out of 
her garden and she catered all the food herself (his parents helped -
 they are brazilian and made some AWESOME food!) - it was, without a 
doubt, the best wedding i've been to!  (second best was 
a "masquarade" wedding in pittsburgh the day before halloween...)  
my cousin, on the other hand, had a huge traditional wedding and 
presented (did not ask, merely presented) her parents with a HUGE 
wedding bill...  that wedding wasn't as much fun... too 
pretentious...
