When the reports are viewed on the web page, What's Up version 6.0x only displays one week of statistics or events. I do not think that this can be changed. What's Up does keep ALL events and statistical results. Look in the directory where What's up is installed (maybe C:\Program Files\WhatsUp\)and you should see files ending in ".tab". The ST-yyyy-mm-dd.tab files have average ping response time and percent missed polls. The EV-yyyy-mm-dd.tab files report events such as alerts sent and each device failure. These can be viewed with the "Reports" menu from the application user interface.
