When I first set up the girlfriend's laptop to connect to the
internet through my access point, she could see the network with
out me broadcasting the SSID. She has since attempted to set up
an Ad Hoc connection between her two laptops and and now she
can't connect to my access point until I turn on the SSID
broadcast. We have made my access point the preferred network
and the SSID is in  the configuration. WEP and MAC filtering are
enabled and appear to be working since she can connect if I
broadcast  the SSID. Why can't she connect without the SSID
broadcast since she already knows the SSID?

Are we talking all Xp Pro machines & what brand of WNICs & software are we talking. Are you using Xp to configure the wireless or the vendors wireless interface? One can have conflicting settings between the 2. Go to the DM [device mgr] and check the Properties for the WNIC then click the Advanced tab & you'll see the real settings. Unfortunately I don't know what they were. You've already nailed when things were broken so you're halfway there but unfortunately for you or us is that none of us were looking over your GF's shoulder when she made the Ad Hoc changes. If she didn't break things then it could be driver &/or software issue but as Sgt. Shultz use to say "I see noooooooothing". Sorry, I wish I could be more help.
