Are your mailbox account something other than than POP/SMTP ? If so, that might explain it. Normally messages in Sent Items have never left your machine, and therefore will not have any Internet headers under View/Options. Since you see headers, it suggests the message has traveled out and back to be seen in your Sent Items folder.
