Application provided providers should be chosen ahead of built in providers (in
particular MessageBodyReaders/MessageBodyWriters). I couldn't get some tests
to work out for the readers because of this. Just quickly glancing at the
code, this would need to be changed for the the writers as well.
I'll add a simple JUnit test for MessageBodyReaders.
